1/4 cup sesame oil
8 oz Rice Noodles (or rice sticks)
1/2 cup Fish sauce
1/2 cup Tamarind Paste (see below)
1 Tbl Nam Prik Pow sauce (substitute same amt crushed red pepper or Sriraccia Sauce)
1/3 cup dark brown sugar (or 1/2 c palm sugar, if you can get it)
16 oz chicken, cut into strips
8 oz fresh shrimp, peeled and deveined
4 eggs
1 cup roasted peanuts coarse chopped or crushed
4 cups bean sprouts (substitute your favorite veggie here, or skip completely)
2 T sauteed shrimp paste (optional)
2 T chopped garlic
1 bunch green onions, chopped
Crushed red pepper flakes
Lime slices
Tamarind Paste
1/2 lb tamarinds, shelled, seeded, and chopped
1 cup sake
1 tsp turmeric powder
1/4 cup salt
Combine all in a blender until tamarinds are completely incorporated and consistency is that of pudding.
Start the noodles soaking in warm water - no more than 5 minutes. Mix fish sauce, tamarind, Nam Prik Pow, and brown sugar.
Heat the wok, add sesame oil and chicken. When chicken is just about done, add sauce mixture, garlic, shrimp paste, and
noodles, stirring constantly. When noodles are soft (but not gooey) add eggs, sprouts, and shrimp. Keep stirring, cook for 1 minute,
add green onions and peanuts, and remove from heat. Toss thoroughly for another minute, serve immediatley with limes and extra
ground chili on the side.
