Paella
Feeds 4

4 chicken thighs (or 1 pound rabbit)
1/2 lb chorizo
2 cups rice (I prefer Basmati, but any long-grain will do)
4 cups chicken stock + 1 cup water
1 onion, chopped
1 red bell pepper, chopped
1 green pepper, chopped
1 tomato, chopped
2 tablespoons chopped garlic (roughly 6 cloves)
1 tablespoon Azafran (mexican saffron)
Salt and pepper to taste

Brown chorizo in a large skillet or paella pan on medium-high heat. Set chorizo aside, salt and pepper the chicken (or rabbit) and sear on both sides in same pan. Remove and set aside. Add onion, peppers, garlic, and saffron and cook until vegetables are soft. Add tomato and continue cooking until tomatoes fall apart. Return chicken and chorizo to pan, add chicken broth, and simmer for about 10 minutes. Add rice, turn heat down to low and continue simmering for about 30-45 minutes.
Serve immediately.
